Mama-juana (Dominican Republic Vermouth)

Instructions

Step 1

Immigrant Bitters - 1 tsp Angostura Bark (Bolivar, Venezuela), 1/4 cup Medium Roasted Coffee beans (Colombian Coffee), 1/4 tsp Medium Fermented Tobacco Leaf (Nicaragua), 1/2 tsp Sarsaparilla, 1 Vanilla Pod Split in half and seeded (Bahia Solano Colombia), 2 tbs of chopped and dried Orange Peels (Florida Orange), Zest of 1 Orange (Florida Orange), 1/4 tsp "Pipilongo" Peppercorn (Colombian Pacific), 2 cups Woodford Double Oaked Bourbon Whiskey, 2 tbsp Maple Syrup. Combine all ingredients (Except Maple syrup) into a mason jar and let them sit for two weeks. Shake the container once a day. Strain all solids using a micron bag or cheesecloth, and set the liquid aside. Combine all the solids with one cup of water in a pan and boil. Lower heat and simmer for 10 min. Once cooled, transfer the liquid and solids to another airtight container and let it sit for one week. After this process, strain the liquid and combine it with the original Woodford Solution. Add the two tbs of Maple Syrup and incorporate. Let it sit for four days and strain any remaining debris.

Step 2

Woodford Cherry Sphere - Using the "reverse spherification" process Sodium Alginate Bath; Using a hand blender, mix 5g of Sodium Alginate with 35oz of low-calcium water (preferably distilled water) Make sure everything dissolves. Set aside in the fridge and rest for 24hrs. Woodford Sphere; Using a hand blender, combine; 3oz Woodford Bourbon, 2oz Luxardo Maraschino liqueur, 7oz of organic tart cherry juice, 2oz rich simple syrup 2:1, and 5g of Calcium Lactate Gluconate. Once everything is mixed, pour it into a small "half sphere" silicone mold and freeze. Get the Alginate bath ready and a separate bowl with water to be used as a rinse. Grab the frozen half spheres and gently drop them into the alginate bath, one by one, making sure they do not touch nor stick to the bottom of the container. After about 2 minutes of them "cooking' gently remove them with a slotted spoon (I use a Julep strainer) and drop them in the "rinse bowl." Repeat this process until all spheres are done. Store them in the same combination from above minus the calcium (3oz Woodford Bourbon, 2oz Luxardo Maraschino liqueur, 7oz of organic tart cherry juice, 2oz rich simple syrup 2:1)

Step 3

El Libertador - Add ingredients to a shaker tin with ice. Shake vigorously until chilled and diluted. Strain into Pony Savage. Garnish with Woodford Cherry Sphere.
